Mahi Mahi and Mango Salsa

Memories of a Mexican vacation inspire Nina to create a delicious dish of grilled Mahi Mahi with a tangy mango salsa that helps strengthen the immune system.

When Spices of Life began, it was imagined as a Public Radio program. I was brought in to document the making of the radio show.
The most important thing that was going on in this video was capturing the sound. That’s why you’ll see all kinds of microphones in the video.
This shot shows how we set up the Nokia N93 as a Sky Cam and used another N93 on a Monopod.
It’s a behind the scenes look at the making of a radio program. What ended up happening over time was that Nina found that she loved the idea of making unscripted videos, so the focus changed to this videoblog.

Hi Nina,
That was so much fun! Last night carol brought home some Schrod from Legal Sea Foods so I made a version of this recipe with what we had on hand.
I coated the Schrod with Salt, Pepper, Lime Juice and Olive Oil.
This salsa has has peaches, onions, orange juice, cumin, salt, and pepper in it.
I grilled it for 5 minutes on each side, then put the salsa on top and added some green beans.
Yummy!
