The first time I ate Black Bone Chicken Soup in Taiwan some 36 years ago, it was a revelation. First the color!! But then more importantly the flavor!!! I had never tasted chicken soup that was more flavorful or more intensely redolent of delicious chicken. The Chinese have long credited the black bone chicken as having superior therapeutic properties. You taste it when you eat it! Sometimes, this recipe is steamed for hours and only the broth is savored. I can’t bear to throw out the chicken and love to eat it doused with a little soy sauce.

You’ll never get a more delicious panacea for fighting colds and the flu.
